Ingredients

Vegan ‘egg’ mix

  • 250g/9 oz firm tofu, drained, patted dry and crumbled (use supermarket own-brand)
  • 1 tsp English, Dijon or wholegrain mustard (use supermarket own-brand)
  • ½ tsp turmeric
  • ½ tsp black salt (Kala Namak)
  • ¼ black pepper
  • 1½ tbsp nutritional yeast (buy in bulk for cheapest option)
  • 5 tbsp vegan mayonnaise (use supermarket own-brand)
  • Handful of cress
  • ½ red onion, finely diced (optional)
  • 2 tsp chives, finely chopped (optional)

Other 

  • 1 x baguette, cut into 4 pieces or 8 slices bread, spread with vegan butter (use gluten-free bread if needed)
  • 2 tomatoes, sliced (optional)
  • Handful of lettuce leaves, torn into smaller pieces (optional)

Instructions

Vegan ‘egg’ mix

  1. In a mixing bowl, stir all the ingredients together until thoroughly combined.

Other/assembly 

  1. Divide the vegan egg mix evenly between all of the baguettes or bread slices.
  2. Add the tomato and lettuce, if using, and serve.
