Ingredients
Cooked mix
- 50g/2 oz smoked or extra firm tofu (supermarket own-brand), cut into 2cm cubes
- ½ clove garlic, finely chopped
- 5 x cherry tomatoes (supermarket budget range)
- 50g/1.8 oz chickpeas, drained and rinsed
- 1 block of frozen spinach
- 1 tbsp soy sauce (use gluten-free if needed)
- Salt and pepper, to taste

- 2 x slices of wholemeal bread, toasted (use gluten-free if needed)
- 2 tbsp tahini or hummus
Topping
- 1 tbsp sunflower seeds
- Choose either balsamic glaze, sriracha or vegan mayonnaise to drizzle over the top

- Add the garlic and fry for a minute before adding the cherry tomatoes, chickpeas, frozen spinach and soy sauce. Heat until the spinach has fully wilted, stirring frequently. Season to taste.
- Put a layer of your chosen spread onto the hot toast and then pour on the cooked mix.
